Almond Butter Chocolate Chip Cookies
These Almond Butter Chocolate Chip Cookies are super simple to make and perfect for a rainy west coast afternoon. These cookies are flour-less, and require minimal prep time! Sweetened with coconut sugar, they’re lower on the glycemic index making these a little less guilt-free!
- 1 Cup Almond Butter
- 1/2 Cup Organic Coconut Sugar
- 1/2 TSP Baking Soda
- 1 Large Egg Beaten
- 1 TSP Pure Vanilla Extract
- 1/4 TSP Salt
- Dark Semi- Sweet Chips to taste Approx 3-5 per Cookie, or 1/2 cup total
Preheat oven to 350.
Line a cookie sheet with parchment paper.
In a medium bowl beat Egg with whisk until frothy.
In same medium bowl, combine Almond Butter, Coconut Sugar, Baking Soda, Vanilla and Salt into egg mixture. Mix well.
Drop on to cookie sheet in well rounded tablespoons.
Place 3-5 dark Chocolate Chips on top of each cookie, with care, lightly pressing into dough.
Bake in the preheated oven for approximately 8-10 minutes. Keep an eye on these cookies being very careful not to over bake.
Remove from oven and let cool for 5 minutes before transferring to a cooling rack.
