Almond Butter Chocolate Chip Cookies

These Almond Butter Chocolate Chip Cookies are super simple to make and perfect for a rainy west coast afternoon. These cookies are flour-less, and require minimal prep time! Sweetened with coconut sugar, they’re lower on the glycemic index making these a little less guilt-free!

  • 1 Cup Almond Butter
  • 1/2 Cup Organic Coconut Sugar
  • 1/2 TSP Baking Soda
  • 1 Large Egg Beaten
  • 1 TSP Pure Vanilla Extract
  • 1/4 TSP Salt
  • Dark Semi- Sweet Chips to taste Approx 3-5 per Cookie, or 1/2 cup total


  • Preheat oven to 350.
  • Line a cookie sheet with parchment paper.
  • In a medium bowl beat Egg with whisk until frothy.
  • In same medium bowl, combine Almond Butter, Coconut Sugar, Baking Soda, Vanilla and Salt into egg mixture. Mix well.
  • Drop on to cookie sheet in well rounded tablespoons.
  • Place 3-5 dark Chocolate Chips on top of each cookie, with care, lightly pressing into dough.
  • Bake in the preheated oven for approximately 8-10 minutes. Keep an eye on these cookies being very careful not to over bake.
  • Remove from oven and let cool for 5 minutes before transferring to a cooling rack.
  • Enjoy!
